Unlike a simple garam masala, both chicken and mutton masalas are “complete” blends. They are not just for finishing; they are meant to be used during the cooking process to build the entire foundation of the curry.
In short, you use Chicken or Mutton Masala instead of adding coriander, cumin, turmeric, and chili powder separately. You still add Garam Masala at the end for that perfect, aromatic finish.
